Simple, Elegant and Easy Cranberry Relish

INGREDIENTS
2 tablespoons butter
1 medium sweet onion, halved, thinly sliced
1 (8-oz.) round Camembert cheese
1/2 cup sweetened dried cranberries
4 teaspoons brown sugar
1/2 teaspoon salt
4 tablespoons sweet or dry sherry
zest of one orange
2 tablespoons chopped fresh marjoram or rosemary leaves
1/4 cup coarsely chopped pistachio nuts, slivered almonds or walnuts (optional)
This is delicious with the baked cheese but will be a stellar accompaniment to your roast turkey.
INSTRUCTIONS
1 Heat oven to 350°F. Melt butter in large nonstick skillet over medium heat. Add onion; cook 8 to 10 minutes or until very tender, stirring frequently.
2 Meanwhile, place cheese in ungreased decorative ovenproof shallow baking dish or plate. Bake at 350°F. for 10 to 12 minutes or until cheese is soft.
3 Add cranberries, brown sugar, salt, orange zest and sherry to onion; mix well. Cook 5 minutes or until sugar is dissolved, stirring frequently. Stir in fresh herbs; cook and stir 1 minute.
4 To serve, spoon warm onion mixture over cheese and sprinkle with nuts. Garnish this baked Camembert with more sprigs of fresh herbs.
Serve with assorted crackers or serve relish as a side with your turkey.
